Salsa Egg Scramble for One

When I need a quick and easy breakfast, usually because I forgot to meal prep for the week, this egg scramble is my go-to. Why? Well, it’s super flexible (don’t want to use salsa? chop up other veggies!), super quick (like under 5 minutes quick), healthy, and only uses one dish. On top of all that, it’s made of things I usually have on hand without needing to add anything extra to the grocery list!

Note: while this recipe uses salsa, you could chop up bell peppers, mushrooms, onions, etc. instead. Personal preference!

Ingredients

  • 1 whole egg, 2 egg whites

  • 2 T salsa

  • 2 T shredded cheddar

  • Handful of spinach

  • Salt and pepper

  • Cooking spray

Instructions

  1. Spray the inside of a mug or mason jar with cooking spray.

  2. Crack the egg and 2 egg whites into the mug/jar. Whisk until combined.

  3. Microwave 45 seconds.

  4. Stir to break up the egg into bits. Add cheddar, spinach, and salsa.

  5. Stir, the microwave another 30 seconds.

  6. Stir, and continue to microwave in 15 second increments until the eggs are no longer runny.

  7. Season with salt and pepper to taste.
